Coconut Rice Pudding

Coconut Rice Pudding

Serves 4

Ingredients:
75g Thai fragrant or pudding rice
50g caster sugar
400ml can coconut milk
1 ripe mango, chopped
1 lime, zest and juice

Method:

  1. Put rice in a saucepan with the sugar and milk. Refill the can with water and add to the pan.
  2. Bring the mixture to the boil, stirring, then pour into a shallow 1.5 litre ovenproof dish.
  3. Bake in a preheated oven at 150 degrees for 1 hour 25 minutes, stirring occasionally, until the rice is tender and liquid absorbed.
  4. Mix mango and lime zest and juice and serve with the warm or cold pudding.
