Golden Soup
Serves 4
Ingredients:
50g quinoa
2 medium onions
1 large carrot, peeled & diced
1-2 celery sticks, diced
2 garlic cloves, peeled & finely chopped
200g sweetcorn
1 tsp mustard seeds or powder
1 tsp coriander seeds or powder
2 tsp cumin seeds or powder
1 tsp smoked paprika
½ tsp chilli powder
2 tsp turmeric powder
1 tbsp coconut/olive oil
1 litre vegetable stock
1 x 400g can coconut milk
Juice of 1 lime
Salt & pepper
Method:
- Heat the oil in a large pan, add the onions and spices (if using seeds crush or grind first to release oils and flavour) and fry for 5 minutes.
- Add carrots, celery, garlic and quinoa, and stir, making sure that everything is coated in the spices.
- Season with salt and pepper, fry for a couple more minutes then add the stock and bring to the boil. Reduce heat, cover and simmer for 15 minutes.
- Add the sweetcorn, coconut milk and lime juice, bring back to the boil and cook uncovered for 5 minutes. You could add more stock in place of the coconut milk.
