Julie’s Huevos Rancheros
Tomatoes – as many as you like!
Salt & pepper
- Chop the tomatoes, season and fry in a little olive oil until gloopy, add chilli sauce and garlic to taste.
- Crack in a couple of eggs and cook until the whites are just set, sprinkle some grated cheese over the top.
- Scoop the eggs and tomato mixture up and place on a tortilla that’s been lightly fried until crispy (I do this in a small frying pan so the edges flick up and give a rather pleasing dish-like effect).
