Julie’s Huevos Rancheros

Ingredients:
Tomatoes – as many as you like!
Chilli sauce
Garlic clove
2 eggs
Grated cheese
Tortilla
Salt & pepper

Method:

  1. Chop the tomatoes, season and fry in a little olive oil until gloopy, add chilli sauce and garlic to taste.
  2. Crack in a couple of eggs and cook until the whites are just set, sprinkle some grated cheese over the top.
  3. Scoop the eggs and tomato mixture up and place on a tortilla that’s been lightly fried until crispy (I do this in a small frying pan so the edges flick up and give a rather pleasing dish-like effect).
