Pea & Watercress Soup

Serves 4


Olive oil
300g frozen peas
1 onion, chopped
100g watercress
2 garlic cloves, chopped
Salt & pepper
600ml boiling water
1 tbsp veg bouillon powder/veg stock cube


  1. Place a pan over medium heat, add a drizzle of oil, the onion, garlic and salt and pepper. Cook until soft, around 5-10 minutes.
  2. Add boiling water, stock, peas, and simmer for another 10 minutes.
  3. Finally, add the watercress and cook 5 more minutes.
  4. Remove from heat and blend until smooth.
