Black Bean Chilli

Serves 4

Ingredients:

2 tbsp olive oil
1 tsp dried oregano
1 tbsp cumin seeds
2 x 400g tins black beans, drained
1 onion, cut into 1cm dice
1 x 400g tin red kidney beans
1 green jalapeno chilli, finely chopped
1 x 400g tin chopped tomatoes
3 garlic cloves, finely chopped
1 tbsp apple cider vinegar
1 red & 1 yellow pepper, deseeded and cut into 1cm dice
1 tbsp paprika
Salt & pepper
Fresh coriander leaves & sliced pickled jalapenos, to garnish

Method:

  1. Put a large pan over a high heat, when hot add the oil and cumin seeds.
  2. When they begin to sizzle add the onion and cook 3-4 minutes until softened.
  3. Add the chilli and garlic, stir well and cook 2 minutes.
  4. Stir in the peppers and cook 3-4 minutes until softened.
  5. Add the paprika and oregano. Cook for 1 minute then add the drained and rinsed beans.
  6. Pour in the chopped tomatoes, then fill the can with water, swish to catch remaining tomato residue in the can and add to the pan along with the cider vinegar.
  7. Stir well, season with salt and pepper, bring to the boil and simmer 15 minutes.
  8. Serve in bowls garnished with coriander and pickled jalapenos.
